Coconut flour lemon cupcakes

Guys, let me tell you, these lemon cupcakes taste amazing! I used no wheat flour, but coconut flour instead and I sweetened them with a little bit of honey. Healthy and low in carbs, the cupcakes are great as dessert or snack between meals.

Ingredients

  • 60 g coconut flour
  • 2 tbsp chia seeds
  • 1/4 tsp baking soda
  • a pinch of salt
  • 4 eggs
  • 120 ml milk, I used oat milk
  • 2 tbsp coconut oil
  • zest of one lemon
  • 2 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 3 tbsp honey
  • vanilla essence

1.Mix the dry ingredients together.

2.In a large bowl, mix the eggs with milk, honey, oil, lemon juice, lemon zest, vinegar and vanilla. Add in the dry mixture and stir until well combined.

3.Pour into a muffin tin lined with cupcake liners.

4.Bake for 20-30 minutes, until fully cooked.
